The Comforts of Home - Irish Soda Bread Muffins ☘️

When you think of classic, Irish comfort food you may be thinking Irish Stew, Cottage Pie, a "Full Irish" breakfast and perhaps some Irish Soda Bread...but muffins? Given that February 20th is National Muffin Day, we thought we'd provide you with some inspiration. Irish Soda Bread doesn't actually need to be bread. The recipe makes perfect muffins that pair well with your favorite cuppa tea.

Before we get to the recipe, we should note that the story behind National Muffin Day is rather heartwarming. A man would grab a bag of muffins to bring to work everyday and he started to notice that his route took him by several homeless people. At first, he decided to give them some of his muffins, but before long, he started baking extras and giving them out to those who needed a nice little breakfast or snack on a daily basis. A local reporter heard about this story and decided to help this man get some support from others around the area. That story turned into National Muffin Day. The idea is to bake an extra batch or two and donate them to someone in need. Not only will it warm your heart, it will help others too!

IRISH SODA BREAD MUFFINS

Original recipe yields 12 servings

Instructions Checklist
  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.

  • Mix flour, raisins, 1/2 cup plus 2 tablespoons sugar, caraway seeds, baking powder, salt, and baking soda in a large bowl.

  • Whisk buttermilk and egg together in a small bowl. Stir into flour mixture. Fold butter into the batter.

  • Spoon batter into the prepared muffin tin.

  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 30 minutes.
